Football season is here, which means it's time to fire up those grills and gather around the TV. All Things BBQ, the ultimate barbecue store in Wichita, gave us two of their favorite tailgate recipes. Both recipes require minimal ingredients and attention, so you can entertain, watch the game and cook at the same time.
Simple Grilled Chicken Wings
Ingredients:
- 24 chicken wings
- 1 cup Sweetwater Spice Smoked Habanera Barbecue Bath
- Cattleman's Grill 8 Second Ride Seasoning
Instructions:
No matter what type of grill you have- gas, charcoal, pellet or wood- the easiest way to preparte wings is to cook them over direct heat on the grill. Start by trimming the tips and then seperating at the joint. Soak them for 2 hours in Sweetwater Spice Smoked Habanero Barbecue Bath, remove from bath and apply Cattleman's 8 Second Ride Seasoning. Preheat your grill to 300-325 degrees, oil the grates and place wings on grill. Grill for approximately 7 minutes per side, then move to indirect heat until internal temperature reaches 180 degrees.
Jalapeno Poppers
Ingredients:
- Jalapenos, cored/seeds removed
- Cream cheese
- Shredded Colby-Jack cheese
- Sausage, browned and crumbled
- Smoked bacon
Instructions:
Mix equal parts cream cheese, colby-jack and sausage, stir until thoroughly combined. After coring and seeding jalapenos, fill them with the cream cheese stuffing. Wrap stuffed jalapenos in bacon and season if desired. Place the jalapenos in a chili grilling rack and cook over indirect heat in your grill or smoker. Grill until bacon is cooked through and chilies have color. You can substitute sweet peppers for a non-'atomic' version.
